Whistler RV Park – Banana Boats Recipe – 10 minutes!

Try this delicious recipe for Banana Boats that everyone will enjoy!

Ingredients:
•2 ripe bananas
•1 Hershey milk chocolate bar
•1/2 cup mini marshmallows

Preparation:
With the stem of the banana facing up, cut a slit in each banana leaving about 1/2 inch on each end uncut. Place a layer of chocolate in the slit and then a layer of marshmallows on top of that. Wrap in aluminum foil and heat on grill over a hot bed of coals until marshmallows and chocolate are melted. Unwrap and enjoy!

If you are really adventurous, top them off with a scoop of your favorite ice cream and nuts and you have yourself a “to die for” banana split!

Camping Recipe’s – Honey Lemon and Garlic Chicken Kebabs

So your heading on a camping trip and you don’t want the usual hot dogs and cheeseburgers? No, then why not try my extremely easy but massively tasty honey lemon and garlic chicken kebabs!

What you will need (Serves 2);

3 breasts of chicken

5 garlic cloves

5 tablespoon of honey

Begin by soaking the wooden kebab sticks in water so they do not catch fire when they are placed on the grill, if your using metal sticks then this does not apply to you. Then begin to chop the chicken into roughly 1 inch cubes, keep in mind you want to have a good mouthful of chicken so don’t cut them too small. Place all the chicken pieces into a medium sized bowl, crush 5 garlic cloves with the back of your knife and through them into the bowl, don’t worry about leaving the skins on it all adds to the rustic look and the great flavor. After this place 5 tablespoons of honey to the bowl as well as 2 tablespoons of olive oil. Mix the ingredients together ensuring each piece of chicken is well coated. Then begin to thread the chicken onto the stick. Now you could either leave the kebabs to marinade and let it soak into the chicken or you could cook them right away. Either way when you choose to decide to cook the kebabs, place each piece onto the grill (figured its getting a bit cold for BBQ’s) and then turn each kebab systematically every 2 or 3 minutes, in between this time you should spoon over the left over marinade to keep the chicken moist and sticky. The chicken will be cooked after roughly 12 minutes of cooking but you could always cut open a piece to see if the middle is still a translucent color. Serve immediately with side salad and warm pittas!

Still looking for a good idea for your camping dinner?

Ingredients:
1/2 cup orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon lemon-pepper seasoning
1 teaspoon ground ginger
1/2 teaspoon garlic powder
2 boneless skinless chicken breast halves
Directions:
In a small bowl, combine and mix first six ingredients. Set aside 1/4 cup for basting. Put chicken and the rest of mixture into a resealable plastic bag. Put in fridge overnight. Next day drain & discard the mixture. Grill chicken over medium heat. Baste several times with reserved marinade. Serve on rolls with your favorites – lettuce, tomato, etc.

Camping recipe of the week: Burritos

b11 Camping recipe of the week: BurritosYour tent is set up, the campfire is burning nicely, you’re all settled? Time to relax, you can sit back and enjoy the scenery around you, breathe in the fresh forest air, maybe having amazing views of Whistler or Black Tusk Mountain… Getting hungry? Be your own campground chef, how about a Mexican night with burritos?

Ingredients:

  • 8 Large Farm-fresh Eggs
  • 1/4 C. Heavy Cream
  • 2 tbsp. Butter
  • 1/2 tsp. Freshly Ground Pepper
  • 2 Scallions, finely chopped
  • 1 Green Capsicum, finely chopped
  • 1 C. Homemade Picante Salsa
  • 1 C. of Finely Grated Aged Jack Cheese
  • 12 Six-inch Wholewheat Flour Tortillas

How to Prepare:

Whisk eggs, cream, and pepper together in a bowl. Melt butter in a skillet over medium-high heat. Once butter is melted, add Scallions and Green Capsicum. Sautee until vegetables are tender-crisp. Pour the egg/cream mixture into the skillet and stir frequently. Continue to stir until eggs begin to set. Once the eggs have begun to set, remove the skillet from the heat and add the Grated Jack Cheese. Spoon mixture out onto heated Wholewheat Flour Tortillas and top with Homemade Picante Salsa. You can add 1/2 C. of cooked sausage of bacon to this recipe as well.
